Chutney, first tomato and did I mention staples?

With a shopping bag full of free apricots it 369was definitely time to learn how to make chutney. We can’t stand to throw food *away so it seemed the perfect way to not let any go to waste and there’s only so many apricots you can eat..

 This book on jams and chutneys by Sally Wise has had us inspird and determined to fill our pantry with lovely homemade fare.

We’ve been adapting recipes though to what we have on hand. The recipe we followed required curry powder which we’re out of so instead we used tumeric and cumin to add warmth. We’ve also reduced the amount of sugar as the first batch we made was too sweet. Maybe this will affect the longevity of the product but at the rate we eat stuff in this house that really isn’t going to be an issue!

So in a pan combine:

1kg apricots, stoned and halved

500g chopped onions

750g sugar (we used about 500g)

2 cups white vinegar

1 teaspoon salt

1 teaspoon ground nutmeg

1/2 teaspoon tumeric

1/4 teaspoon cumin

1/2 teaspoon mixed spice

(Add or change spices to whatever you like, if you want it spicier add chilli or curry powder. If you want warm sweet flavours maybe add some cinnamon?)

Bring to the boil and reduce heat cook until desired consistency. Add to jars. Read here for preparing jars.

Not forgetting the staples, we’ve pulled out another million or so, well it feels like it. Unfortunately we’ve discovered a random section of concrete in the middle of the floor by the kitchen. It’s rather strange and has us a bit confused as to why it’s there, but oh well it’s all about being flexible and going with the flow when you’re renovating.

Has anyone else found any strange things while renovating? I’m still hoping to find a hidden safe with treasure…
